Oppskrift: Bløtkake med vaniljekrem og jordbærkompott

4 eggeplommer 90g sukker 3 ts ekte vaniljesukker 2 dl kremfløte 2 dl lettmelk 2 ss maisenna 1 klype salt
Jordbærkompott:
600g frosne jordbær 5 ss sukker (smak til avhengig av søthet på bær) 2 ts vaniljepulver 1 ss maisenna rørt ut i 1 ss kaldt vann 2 ss sitronsaft
Krem:
5 dl kremfløte 2 ts vaniljepulver 4 ss sukker 1 ts gelatinpulver blandet med 2,5 ss vann 40g hakkede valnøtter
Fremgangsmåte
Sukkerbrød:
1. Finn frem en 25cm diameter rund kakeform. Legg bakepapir i bunnen og pensle sidene lett med smeltet smør.
2. Sikt hvetemel, vanilje og bakepulver sammen.
3. I en kjøkkenmaskin med ballongvisp, pisk eggedosis av egg og sukker. La maskinen vispe i ca 5 minutter på medium hastighet, til du får en fyldig og tykk eggedosis, og du kan skrive tydelig «Ole» med den rennende røren.
4. Sikt inn det tørre, og vend forsiktig inn med en slikkepott uten å røre for mye. Hell over i formen, og dra røren lett opp langs kanten for jevnere steking. 5. Stekes på 175 grader i 35-40 minutter. Sjekk med en kakenål – kommer den ut tørr, er kaken klar.
6. Vend opp ned på en rist, og la avkjøle i form. Del i 3 like lag.
Vaniljekrem:
1. Rør ut maisenna med melk og fløte og kok opp. La det tykne godt under omrøring. La det gjerne koke 2-3 minutter.
2. Visp sammen eggeplommer med sukker og vaniljesukker i en bolle, og visp inn 5 ss (1 om gangen) av den varme melkeblandingen.
3. Hell alt tilbake i kjelen, sett på medium varme. Rør mens blandingen varmes opp til kokepunktet, og fjern fra varmen rett før det koker. Sett på lav varme, og rør kontinuerlig i 4-5 minutter slik at kremen tykner til. Ikke la det koke. 4. Hell over i en bolle, og sett i et iskaldt vannbad. Rør i kremen mens den avkjøles.
5. Når kremen er lett avkjølt, dekk med plast og avkjøl helt i kjøleskapet. Rør godt sammen og ha over kaken.
Tips: dette gjøres enklest ved å ha kremen i en sprøytepose og sprøyte ut «dotter» rundt på kaken.
Jordbærkompott:
1. Kok opp jordbær, sukker og vanilje, og trykk bærene lett sammen. La småkoke i 10 minutter, og skru av platen.
2. Rør inn maisenna-røren, og sett tilbake på platen. Kok opp og la tykne.
4. Skru av varmen og rør inn sitronsaft. Avkjøl.
Krem:
1. Bland gelatin og vann, og la stå 5 minutter.
2. Bland fløte, vanilje og sukker i en bolle.
3. Varm opp gelatinen, men ikke la den koke.
4. Hell over i fløten og pisk til silkemyk krem.
5. Del i 2 boller og vend inn valnøtter i den ene.
Oppbygging:
Legg halvparten av jordbærkompotten på det første kakelaget, og topp med skivede jordbær. Legg på vaniljekremen med en sprøytepose. Legg på nytt lag med sukkerbrød og resten av jordbærkompotten. Smør på valnøttkremen og noen hakkede valnøtter, og legg på det siste kakelaget. Topp med resten av kremen og friske jordbær. La gjerne kaken stå avkjølt 1-2 timer, slik at alle lagene får satt seg.
