Oppskrift: Eple smuldrepai med mandler og vaniljeis
Høst betyr eplesesong, og epler betyr kortreist matglede. I alle fall om du tør å prøve deg frem, slik som vår samarbeidspartner og kokk Ida Marie Storbakken. Vi har allerede latt oss imponere av hennes hjemmelagde bjørnebærsaft denne sesongen, og under deler vi nå oppskrift på smuldrepai med eple, mandler og vaniljeis.

Ingredienser
Til epleblandingen:
6 stk epler
50 gram sukker
50 gram brunt sukker
100 gram smør
2 ts kanel
0,5 dl vann
Til smuldredeigen:
120 gram romtemperert meierismør
120 gram hvetemel
120 gram sukker
80 gram havregryn
100 gram mandler
1 ts salt
Fremgangsmåte
1. Kutt eplene i terninger. Bruk gjerne en porselenskniv som ikke reagerer med syren i eplet slik som en stålkniv.
2. Ha eplene i en stekepanne med høye kanter sammen med sukker, brunt sukker, smør, kanel og vann. Sett på høy varme og stek/kok eplene i ca. 10 minutter, rør innimellom.
3. Sil vannet/saften som kommer ut av eplene over i en liten kjele.
4. Fordel eplene utover en ildfast form/bakeform, Ida Marie har brukt vår bakeform på 37 cm fra serien Bake.
5. Bland sammen alle ingrediensene til smuldrepaien (utenom mandler) i en bakebolle. Pass på at smøret er romtemperert eller mykt, men ikke smeltet. Ida Marie pleier å kutte smøret i terninger for deretter å ha det noen få sekunder i mikroen, hvis det har stått i kjøleskapet.
6. Kna alle ingrediensene sammen for hånd. Strø så og fordel smuldredeigen over eplene. Strø over hakkede mandler.
7. Sett formen midt i stekeovnen, varmluft 200 grader i ca. 20 minutter.
8. Saften fra eplene som du silte over i en kjele, kan du la koke noen få minutter til en deilig karamellsaus.
9. Ta formen ut av stekeovnen og server den varm sammen med myk vaniljeis og den gode karamellsausen!
