750 g flaskegresskar i terninger
1 stk løk, grovhakket
2 stk hvitløksbåter, uten skall
2 stk salvieblader
5 stk timiankvister, uten blader
½ ts malt muskat
Havsalt og knust svart pepper
1 ss olje
400 ml grønnsaksbuljong
180 ml kremfløte
50 g parmesanost
500 g fersk linguini
Fersk persille, grovhakket til servering
Fremgangsmåte
1. Forvarm ovnen til 180°C/160°C varmluft.
2. Legg gresskarterningene i gryten, sammen med løk, hvitløk, salvie, timian og muskat. Krydre med salt og pepper før du heller over olje.
3. Rør slik at oljen dekker alle ingrediensene, og la det deretter steke i den forvarmede ovnen i 20 minutter. Når det er gått 20 minutter, snur du gresskarene og lar det steke i ytterligere 10 minutter (gresskaren skal ikke endre farge, bare bli myke).
4. Så snart gresskarterningene er gjennomstekte, tar du dem ut av ovnen og legger de i en foodprossesor. Ha i buljong, fløte og parmesan før du blander det til en jevn og silkeaktig saus.
5. Ha sausen tilbake i gryten og plasser den over middels til lav varme. Ha i fersk pasta og la den koke i sausen – dette tar ca. 3–5 minutter. Hvis sausen er litt for tykk, har du i en liten skvett med vann.
6. Avslutt med grovhakket persille.
